How to reset settings on ipod touch without making the jailbreak go?

I bought myself an used ipod touch 3g and I’m trying to delete everything and all settings from the previous owner. It is jailbroken, and I want it to stay jail broke, I just want to reset all the settings and delete all the files from the previous owner. Any help will be greatly appreciated.
